This paring knife is super sharp and has stayed that way after months of daily use.  As Bobby Flay once said, "A sharp knife is a safe knife!".  Because this knife stays so sharp, it let's me use less force when slicing or cutting, so the knife control is really good.  The balance and light weight is perfect.  Handle has a non-slip surface that keeps a firm grip even when cutting wet or slimy food items.  I highly recommend these Kyocera Innovation knives!!!
